Made with 100% Cinsault from 80-year-old vines. Not often used on its own, Cinsault is usually used in blends as a way to add freshness to big Languedoc wines. However, here the age of the vines lends the grapes that extra concentration they need, and elevates the otherwise ‘blending’ grapes. The grapes are hand-harvested and placed in vats for a 15-day carbonic maceration. Once fermentation is complete, the wine is racked, pressed, and kept in stainless steel tanks, where it rests for approximately 6 months.
