Nectar-like sweet wine made using late-harvest Catarratto in the classic 'passito' style, whereby the grapes are dried out whilst hanging on the vine by having their stems cut, stopping their water supply. It's an alchemical process, resulting in a luscious, amber wine crammed full of sunkissed, marmalade-y stone fruits, flashes of almond and salt, and finishing with long acidity that cuts it all through.
