Some seriously classy Burgundy from Monsieur Thomas Pico in Chablis. Razor-sharp Chardonnay over limestone, for those who 'don't like Chardonnay', as the addage goes.
Some real finesse on show here: the grapes come from three separate parcels of low-yielding 40-70 year old vines, fermented spontaneously together before resting in a variety of vessels for at least18 months of maturation; concrete eggs and vats, barrels and foudres of different sizes as well as stainless steel vats.
The blend gives great purity and mouth-watering, zesty grapefruit, along with a saline minerality, apricot fruit and texture from the concrete. Incredibly clean, long finish. Pattes Loup's flagship wine.
