Dialling up the juice here, this is some fantástico tinto which we can best describe as a very lightly spritzy Cava with a healthy (not to mention unconventional) dose of blackcurrant-y Cabernet Sauvignon. Xarel-lo & Parellada bottled during the primary fermentation, so think of it as pét-nat Cava if you will (although they’re not allowed to call it that). Brut nature, so fermented totally dry.
