A pétillant naturel from Sèbastien’s younger vines. The fruit was hand-harvested and then directly pressed over 5 hours. The fermenting juice was bottled in January 2019 and left on the lees for 28 months before disgorgement with no dosage. A soft, fine pink bubble with lively acidity is rounded out by a murmur of residual sugar.
