Do you know your pet-nat from your traditional method? Your Crémant from your col fondo? At Wayward the many ways with sparkling wine have always held a bit of magic for us.

The bubbles waiting to burst forth are the result of a unique fermentation that has taken place inside each individual bottle, from loose, low-key ancestral method spritz through to the tightly-moussed, needle-prick fizz of a regal Champagne or Cava.

This is as old-school as Prosecco gets, and would most likely be unrecognizable as such by the majority of fans of the ubiquitous Venetian fizz. This is the Glera grape, harvested from vines at much higher altitude than in commercial production and given the rustic treatment. Salty lemon citrus with a mouth-watering sour/sweet balance and an inviting, hazy appearance. Find out more.

Aromatic fizz that introduces a little Moscato to the mix. A beautiful deep amber from a slightly longer maceration this year, the aromas soar and the oily, pithy citrus character is deliciously dry and concentrated, lingering on in the finish. Find out more.
