Deep colour typical of the inky red Saperavi grape, but lifted and aromatic care of the Mtsvane, which is white. Flavours of blueberries and dark currants, velvety texture with a hint of bitter chocolate and nice defined tannins.
Made in the traditional qvevri - a clay vessel that is buried in the ground to channel the heat of the earth, creating the perfect conditions within for a natural fermentation without temperature control. As ancient a method as you'll find.
