A bone-dry, traditional method sparkling wine from a producer more principally associated with the production of fine Marsala. Here Grillo, a grape capable of making highly structured white wine, is fermented in a mixture of tanks and old wood barrels and then re-fermented in the bottle to create some immaculate bubbles. Although Sicily is maybe not the first place you'd look for sparkling wine, this is very classical, precise stuff. Peachy stone fruit and salty sea minerals with a toasty richness beneath it all.
