Mineral-driven Pinot Noir from the rolling hills of the Auvergne. Pouring translucent ruby in the glass, at first the wine jumps at you with lots of tart red fruits before layers of salt, smoke and minerality begin to emerge – a textbook Auvergnat Pinot that captures all the things we love about the volcanic region. On the palate the wine is supple, with soft tannins and mouth coating fluidity. Pure, nuanced and elegant, this is a wine clearly shaped by the volcanic region from which it comes. Tasting great now, we imagine this will only get better with time – lay down if you can.
The only single-parcel cuvée that Camille and Mikaël produce with Pinot Noir from their Larrivas plot on the northern slopes of Corent. The vines here at grow at 380m above sea level on basalt. The fruit is destemmed and fermented in concrete, before being transferred to stoneware amphora to age for 12 months.
A bottle for those curious Burgundy lovers.
Camille and Mikaël Hyvert bought Domaine des Trouillères in 2015, drawn to the Auvergne for its terroir and because of their passion for archaeology. The terroir here is shaped by the ancient volcanic activity, with the resulting wines displaying an incredible sense of place characterised by a smoky, volcanic, mineral depth.
The couple farm 6 hectares scattered over a few different parcels on the slopes of the puy de Corent (basalt), the puy de Tobize, the puy de Marmant and the puy de la Montagne de Stras (part of the Massif du Sancy, overlooking their village). Their vines are planted between 380 and 500 meters abouve sea-level, are certified organic, and they practice biodynamics and bon sens paysan. The couple make wines of wonderful ease, but with a real textural depth from aging in multiple vessels. The wines feel deeply rooted in their volcanic surroundings and an ode to Gamay and Pinot Noir from the region.
