Thirst quenching fayre from Emi, this is an intriguing combination of Paralleda, Chenin Blanc and Muscat from the clay-limestone soils above Penedes in Catalonia. Created as a sequential co-fermentation, the earlier ripening Chenin was picked, destemmed and had a short 2 day maceration. Ten days later, direct pressed Muscat joined the ferment whilst 3 weeks after this the later-ripening Paralleda was picked, destemmed, macerated for 5 days and added to the same steel tank.
Emi works small parcels of rescued vines in the hills around Penedes, Catalonia. Orignally hailing from Argentina, he is settled in Barcelona and pursuing his passion for winemaking using unusual grape combinations to produce immediate, juicy wines of thirst.
