Region – Sicily

Most conventional wine makers will use animal products for fining their wine, such as egg white or casein. Fining being the process of removing the fine particulate matter after the fermentation process such as yeast cells and proteins, to make the wine crystal clear.

Natural wine makers on the other hand eschew intervention and strive for as little manipulation in the wine making process as possible. They will therefore avoid filtration and fining and with it the need for any animal products, resulting in vegan friendly wines.

Therefore you will often find natural wines have a noticeable amount of sediment in the bottle, or appear hazy or cloudy. Natural winemakers tend to use the process of racking as the sole method of removing as much of the sediment from fermentation as possible. The wine will be allowed to settle in its fermentation vessel so as much sediment as possible settles at the bottom. The resulting clearer wine is then pumped to a new vessel with the sediment left behind.

Fabio Ferracane
Camaleonte 2023

A breezy, 'all-in' kinda wine that serves as an approximation of Fabio's overall style. Named after the chameleon as the blend changes every year - it is a mix of everything to be found in the cellar. Fruity, fun and delicious, with unmistakable notes of salty red cherries, some great texture from the skin-contact elements and it just goes down so so easily. Sicilian sunshine from start to finish. An abundance of tangy sherbet lemon pithiness and chalky minerals to quench the thirst, with a balanced brioch-y undertone from the very present lees sediment. The frothy, finely-moussed bubbles and low finished alcohol make this the perfect aperitivo wine, particularly for those who embrace the cloudiness. Find out more.

Fabio Ferracane
Aggiara 2021

Next-level sister wine to Fabio's 'Macerato' cuvée with a more refined process. Here, an extended time in amphora has imprinted a whole new textural identity on that same herbal, pithy and deep maceration of Catarratto. There is the familiar eucalyptus and salt-tinged apricot stone fruit, but here the tannins feel filed-down and beautifully fine-grained from the contact with the clay vessel. Find out more.
