Do you know your pet-nat from your traditional method? Your Crémant from your col fondo? At Wayward the many ways with sparkling wine have always held a bit of magic for us.

The bubbles waiting to burst forth are the result of a unique fermentation that has taken place inside each individual bottle, from loose, low-key ancestral method spritz through to the tightly-moussed, needle-prick fizz of a regal Champagne or Cava.

Ancestral-method Chenin made using the earliest harvest selection for its abundance of mouthwatering acidity.  The two years sur lattes before disgorgement has taken the wine from quenching pet-nat into altogether more refined territory. Find out more.
