A sought-after cuvée. This is Pinot Noir from some of Patrick's oldest vines which are planted over limestone in Madargue. Bright and lifted with sherbet-y acidity, the Pinot brings plenty of dense fruit, balanced out by a light savoury, iron-y note. The wine is lifted by just a splash of Chardonnay in the mix. There’s a wonderful balance here between power and finesse. Bouju’s top cuvée!
The Pinot is macerated in whole bunches, while fermenting some direct press Chardonnay is added. The wine is then aged in a mixture of old barrels and amphora, on the lees, for 12 months. Fine-grained and electric.
Patrick started making wine in 2004 with 1.5 hectares of vines which has now increased to around 5 hectares. The soil in Patrick's vineyards is heavily basaltic thanks to the chain of extinct volcanoes, the Puy de Dôme at its heart, which form the backbone of the region. Patrick's vineyards are mainly planted with old Gamay d'Auvergne (a smaller berried, thicker skinned variety than its Beaujolais cousin), a little Chardonnay and some Pinot Noir.
