The latest from Le Chai Volant

After a short but packed 48hrs in London with us last week, we're now happy to let you know that the four wines Fatim Sabri was showing are all now available to order, both in our shop and online, and wholesale to the trade.

Making just a few thousand sans-soufre bottles a year from secluded vines at the foothills of the Canigou mountains of the Pyrénées-Orientales, anyone who has tasted them, or had the pleasure of meeting Fatim will attest to how special and unique they are.

From the difficult 2025 vintage where she was able to make only one wine, we have the return of the profoundly herbal Lèvre Voile, a maceration of Grenache Gris and Blanc. Shedding the 'rock n' roll' iteration of the previous vintage, Carry Carry 2024 is generous, deep-fruited Carignan with powdery aromas of dry spices. Similarly, the sensational Syrah de Cœur 2024 is everything you'd want for the season, taking the black olive character of the grape into salty tapenade territory, again with gorgeous, seductive perfume that floats above the dense fruit. From back in 2022 we were able to pick up the last of her heady Muscat maceration, Par'Faim Florale.
