A new addition to the range of wine we have available from this iconoclastic producer! In a simikar ilk to the Auksinis, it is a deep golden white wine, picked late for maximum ripeness and to allow a small portion of the grapes to be infected with Botrytis (or Noble Rot as it is more commonly known) which dries out the grapes, concentrating the sugar ripeness. The process to make the wine is by and large the same, fermented and then rested on the lees for 2 years in old oak barrels. Here you can notice the differences in terroir, the Saulétas parcel being more heavily limestone-based, with less water-retaining clay resulting in a slightly leaner wine with some stony, mineral presence beneath all the rich, creamy, bruised pear fruit. As we've mentioned in our other listings for this producer, don't go expecting your classic Sancerre - this is on another level altogether.
