Pais is a historical, and in many cases forgotten grape of Chile and the fruit that makes this wine comes from vines that range from an unbelievable 150 to 200 years old. Obviously not the kind of thing that you'd be working with in commercial winemaking, and that is just the point. Pais has a naturally low acidity; it's a complex grape to work with in cellar. It has strong vines which work very well for organic agriculture. It has dry rustic tannin and can be very green so you need to be gentle. The wine is from vines in a single plot with unique mixed soils of stones, volcanic rock, granite, and black sand which impart a distinct smoky minerality in the wine. Fruit is cherry-like and herby. The thin skins mean a lighter wine you could perhaps call a Chilean Beaujolais if you were fond of descriptive hybrids - the wine will certainly benefit from a light chill and is incredibly easy-drinking.
