Wonderful, aromatic fizz sliding in below £20. Roberto makes all of his sparkling wine in the traditional method, meaning the wine is refermented in the bottle under closure to trap the bubbles. No sugars or selected yeasts are added to achieve this; in a walk-in fridge in the cellar Roberto keeps a supply of grape must - basically raw grape juice kept at this low temperature to stop it from fermenting. Once in the bottle it gets to work! This wine has that delicious, zesty lime cordial and rose blossom nose you'd expect from the grape with a cutting, refreshing white grapefruit zing to the palate. There's some lovely, balanced depth from the lees contact, as another of Roberto's little touches is to disgorge the bottles to order, meaning the later in the season the wine is shipped the longer it sits on the lees, resulting in subtle additional depth as the wine develops over the year.
