It was then bottled straight after, in November the same year, meaning all of the ageing has taken place in the bottle. The wine feels somewhere between a fruit punch and a herbal tea - juicy red strawberry melds with spicy Grenache, the method giving the red fruits a bubble-gummy, pastel-like quality. Beneath this glossy surface sheen is a mineral core; petrichor, umami, a savoury counterpoint. Glimmering a vibrant, translucent ruby in the glass, this is a unique lightly-coloured red with elements of a macerated white that you will want to serve chilled.
