The former come from organically farmed vines planed over limestone and clay near Sardan in the Gard, the latter from St Remeze in the south of the Ardèche, both of which benefit from the influence of the mistral wind, moderating temperatures. Made in the infusion style, whole bunches of Viognier sit for 25 days in the direct-pressed juice of the Grenache, for a gentle extraction. The wine was then slowly pressed off by hand and left to rest for one year in an old 400-litre barrel before bottling with no additions.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe longer ageing in barrel gives a much denser, more textural expression this vintage and the impression is profoundly herbal. Golden\/amber-hued, with tannins that are chalky, granular and deeply integrated. Citrus oils, salty apricot, stem ginger and anise meld harmoniously with savoury, herbal aromatics and a distinctive tea-like character.
