A wine that, to us, is so typical of this part of Sicily, and harks back to the style of the ancient Marsala. Sea-salted apricot, wild herbs and flowers float out of the glass, preceding chalky minerals, grippy, mouth-coating tannins and a resinous pine cone quality, flecked with medicinal sage and clove. There is a creamy richness at play, balancing with the pithy citrus and retaining some super-long acid in the finish. In Fabio's own words: \"A wine that brings us back to the memory of the Marsala farmers of the past, to the Sicily of our grandparents\".\u003c\/p\u003e\n\u003cp\u003eThe grapes were de-stemmed and then saw a long maceration of 19 days before being pressed into steel tanks to rest for three months, then into concrete for a further five, after which the wine was bottled with no additions. This same base wine is used for Fabio's '\u003ca href=\"https:\/\/waywardwines.co.uk\/products\/fabio-ferracane-aggiara\" title=\"Aggiara Sicily Natural Wine\" rel=\"noopener noreferrer\" target=\"_blank\"\u003eAggiara\u003c\/a\u003e' cuvée, which following the maceration takes a different path by being aged in amphora.
