Sparkling Wine

The beauty of sparkling wine is that once it goes into the bottle, that is just the beginning. A still wine is transformed through the alchemy of fermentation in bottle to become anything from a Cremant to a Pet-Nat, a Champagne, Prosecco or Cava, traditional method or ancestral method, disgorged or not, brut nature to demi-sec... the number of different styles and methods is great. We’ve got refined grower Champagne from the likes of Vouette et Sorbée through to the rustic frizzante wines of Costadilà and Orsi San Vito. The presence of co2 in these bottles often means it is much easier for the producer to add no sulphur to the wine too. Organic, biodynamic and natural wine in its many sparkling guises.

    Tillingham Athingmill 2020

ATHINGMILL is a bit of everything, a snapshot of the vintage, combining all wines and ciders from that year. With no particular design, just what instinctively comes to hand. We wanted to make something fun, something playful, but also...

Vincent Caillé X Bulles Rosé NV

Moving away from the more synonymous Melon de Bourgogne of this western Loire location, but still from vines planted over the same distinct gneiss and gabbro soils, this is a tasty ancestral method sparkler of mainly Chardonnay, with its blush appearance...

    Camillo Donati Ribelle Rosato 2019

Frothy, savoury, infinitely delicious Lambrusco-style Rosato using 100% high-acid Barbera. Candied berry fruit and lively bubbles make this an essential summer-swigger, preferably outdoors with a good supply of pizza. Camillo’s wines are all...

    Farnea Boh.lla 2020

From a thirty year old vineyard of Glera. The grapes were picked in early September and spent nineteen days on the skins in cuve before being transferred to bottle with a little juice from the same harvest. After refermenting, the wine rested on its lees...

Domaine Bobinet Du Rififi à Beaulieu 2020

Sebastien and Émeline have vines planted around Saumur on the banks of the Loire. Their cellar in Beaulieu is a cave that is dug about 500m deep into the soft limestone cliffs. Inside the temperature is a stable 12 degrees all year round –...

Vouette et Sorbée Fidèle Champagne Brut Nature NV

As you're more likely to find a pet nat from the Loire, or a cremant from Limoux listed here at Wayward, it follows that Champagne isn't really an area we specialise in. Until we were educated otherwise, we were of the impression that Champagne only came...

    Beck-Hartweg Tout Naturelliment Pétillant 2020

We were very happy to get our hands on a couple of cases of this very un-Alsatian, Alsatian pét-nat - forget Cremant d'Alsace, this is something very different; a juicy blend of Pinot Noir and aromatic Muscat that goes into the bottle during its...

    Landron-Chartier Natürlich 2020

This vintage of the ever-popular Natürlich is a direct press of Folle Blanche and Pinot Noir - the juice of the latter has a pinkish tint giving this wine a lovely pale blush colour in the glass. 6 months on the lees before disgorging,...

Les Hautes Terres Joséphine Crémant de Limoux NV

Limoux sits in the very southern part of France, so far in fact, it is actually at fairly high altitude as the slopes raise toward the Pyrenees, so away from the baking heat of the lower-lying plains. We're sure you're aware of the excellent value for...

    Quarticello Despina 2020

Wonderful, aromatic fizz. Roberto makes all of his sparkling wine in the traditional method, meaning the wine is refermented in the bottle under closure to trap the bubbles. No sugars or selected yeasts are added to achieve this; in a walk-in fridge in...

    Cà di Noci Sottobosco 2018

Proper Lambrusco-style sparkling red that we describe as being exactly like summer pudding in liquid form. Lots of little black berries, a tart lick of acid and a nicely upfront tannic structure. This vintage has fermented out to a happily drinkable 10...
