Cà di Noci Sottobosco 2020
Proper Lambrusco-style sparkling red that we describe as being exactly like summer pudding in liquid form. Lots of little black berries, a tart lick of acid and a nicely upfront tannic structure. This vintage has fermented out to a happily drinkable 10%...

Axel Prüfer - Le Temps des Cerises 'La Peur du Rouge' Sparkling 2020
A wine Axel has only made on a couple of occasions when the vintage has suited. The base wine is the same as the Peur du Rouge, but some Clairette was harvested at the end of October and the juice from this was used to re-ferment the wine in bottle. A...

Aldo Viola Brutto 2020
The very first time that Aldo has made a sparkling wine and we have to say, why didn't he think of this sooner! Much more laid-back and immediately accessible than his heady, show-stopping macerated whites - this is super-sharp, early-picked Catarratto...

Le Thio Noots Hénadé Bulle 2021
A wine that really spoke to us when we first tried it - this is a lively pét-nat made with an obscure strain of Gamay (Chaudenay, with thicker skins) that couldn't taste more like crunching on a bunch of grapes if it tried. Pure in its expression,...

Testalonga I Am The Ninja 2021
The first time we have listed some of Testalonga's good-time bubbles! As if the bulldog on the label wasn't selling this one enough, here we have a zero- sulphur pét-nat of fleshy, vinous Chenin Blanc; disgorged 10 months after the wine went into...

Ca de Noci Tre Dame 2020
A rosato of 100% Sgavetta, with the most delicate spritz of pinprick bubbles. This style provides a wine with a much more approachable, lower-tannin character to the Masini brother's formidable Lambrusco. Here the fruit is more airy and light, with a...

Sparkling Wine
The beauty of sparkling wine is that once it goes into the bottle, that is just the beginning. A still wine is transformed through the alchemy of fermentation in bottle to become anything from a Cremant to a Pet-Nat, a Champagne, Prosecco or Cava, traditional method or ancestral method, disgorged or not, brut nature to demi-sec... the number of different styles and methods is great. We’ve got refined grower Champagne from the likes of Vouette et Sorbée through to the rustic frizzante wines of Costadilà and Orsi San Vito. The presence of co2 in these bottles often means it is much easier for the producer to add no sulphur to the wine too. Organic, biodynamic and natural wine in its many sparkling guises.
