Sparkling Wine
The beauty of sparkling wine is that once it goes into the bottle, that is just the beginning. A still wine is transformed through the alchemy of fermentation in bottle to become anything from a Cremant to a Pet-Nat, a Champagne, Prosecco or Cava, traditional method or ancestral method, disgorged or not, brut nature to demi-sec... the number of different styles and methods is great. We’ve got refined grower Champagne from the likes of Vouette et Sorbée through to the rustic frizzante wines of Costadilà and Orsi San Vito. The presence of co2 in these bottles often means it is much easier for the producer to add no sulphur to the wine too. Organic, biodynamic and natural wine in its many sparkling guises.
