'Sfuso' is the type of wine that you'll find at the trattoria on your trips to Italy - simple wine for the table that is poured into carafes from a tank rather than being bottled. Yes, this wine does come in a bottle, but it gives you an idea of the style of the wine - simple 'vino da tavola' at its finest, and something that despite its ubiquity on Italian soils is something that you don't find so easily once you're home again. This is Cabernet Franc fermented in concrete tanks that add a nicely granular note to the unpolished tannins. The wine is bottled immediately without any elaborate elevage, so carries with it a little co2, resulting in a light spritz to the wine, in lieu of the addition of sulphites. The fruit is cherry and black olive; a real, honest and unfussy country wine that we'd happily drink every day.
