Romorantin is the lesser-known grape of this tiny appellation within Cheverny, and is rarely used elsewhere. The wine has not been through malolactic fermentation so has an excellently keen acid framework that cuts into the palate. The wine has a beautiful golden straw colour and the fruit has something of the tart tang of rhubarb about it, still finishing with some rich creaminess. A long, unhurried two-year élevage period to ensure stability in the wine without the use of additions. Majestic wine with gravity-defying structure.
