Chitry is the smart choice for those looking for Chardonnay with the stylistic hallmarks of Chablis, but minus the price tag - it is after all just a (lime)stone's throw away with similar climactic conditions and Kimmeridgian beneath the vines. At little over £30 this pristine white Burgundy is incredibly generous. The wine is raised in a mixture of enamel-lined tanks, barrels and foudre, and the mixture of old wood and neutral vessels creates a perfect tighrope balance of texture and edge.
Alice & Olivier De Moor are pioneers under the Chablis appellation - one of the first producers to break from standardised tradition to create truly expressive wines in this highly regarded, fair to say household name, of Burgundy. The vineyard work is organic with the grapes all picked by hand. Following spontaneous fermentation the wines are left to rest adequately before bottling, and nothing is added or removed at all, bar a tiny addition of sulphites in the very final stages. It goes without saying that our reserves of De Moor are on the small side! Don't miss out.
