Les Cèdres is Chardonnay from 80 year-old vines planted over limestone-marl that is spontaneously fermented whole bunch with no sulphur dioxide added during the vinification. The wine is aged in used demi-muids and then spends 30 months in smaller barriques. The wine is then bottled in the summer on the fine lees, two years after the harvest with a small amount of so2. The wine is made in the non-oxidative 'ouillé' style, meaning it retains its primary fruit characteristics over the sherried note associated with time under flor.
