Singular Chardonnay? look to the Jura region; small producers working with traditional methods over Jurassic soils. This Chardonnay is thick on the palate, and packed full of complexity. There are golden, honeyed notes as well as extremely ripe tropical fruits and a twang of spice and salt. This wine is made in the ‘Ouillé’ style, meaning to keep the barrels topped up to prevent oxidation, although to us, this wine does display some subtle oxidative notes in the form of hazelnut and almond tones that add to its overall richness. We’d say give this a bit of time to open up in a carafe, crack open a wheel of Comté and you’ve got some serious flavour on your hands.
